Several things could be causing white smoke in your 7.3 Powerstroke:

Causes of White Smoke in 7.3 Powerstokes
White smoke can be caused by a couple of different things:
Injectors With Stiction
If your 7.3 Powerstroke produces white smoke on startup, but then the vapor dissipates when the truck gets warmed up, the white smoke is likely from unburned fuel. When your combustion temperatures aren’t high enough to completely burn off fuel, your engine becomes filled with stiction. Water in Your Fuel
Poor fuel quality can cause water in the fuel without you realizing it. When you have poor fuel quality, water can build up in your fuel system from condensation.
